Reddit users have revealed the best method for storing avocados after a user sought some advice on how to keep the ingredient fresh.
They wrote: "I really like avocados and want to start cooking with them but they seem to go bad so quickly. Does anyone have tips with storing avocados/guac? I've heard using lemon juice is good but I'm not entirely sure if thats true or not, and I worry about it affecting the taste."
But it appears that the user was indeed correct, as several other redditors recommended using either a lemon or its juice to prevent avocados from spoiling.
One wrote: "I store mine in a container in the fridge with a lemon cut in half in there too, works a treat."
Others recommended using lemon juice to as it slows down oxidation which is what causes avocados to brown.
They wrote: "If you have one sliced and need to preserve, squeeze lemon juice on top. This will slow down oxidation (what makes the avocados brown).
A second person, agreeing with the advice, responded: "I came here to say this!"
There are two main mechanisms involved in the use of lemon juice to slow down oxidation. One being the high acidity inactivating the enzyme that causes browning, and the vitamin C acting as an antioxidant that reacts with oxygen before the fruit's own compounds can.
Additionally the citric and other acids in the juice drastically lower the pH, which prevents the enzyme from functioning.
Another person who also vouched for using lemon use, suggested storing the avocados in the fridge and taking them out "a day or two before you need to ripen them".
They added: "I prefer to buy slightly underripe as they ripen well at home and I can control how many ripe at any one time that way. Once cut, store with the pit in a small sealed container (to reduce oxidation) in the fridge. You can also rub the cut edges with lime/lemon/acid if you want."
